That distinction runs through every thread. Home curers weigh two very different things: the meat, which can be hundreds or thousands of grams, and the cure and salt, which can be a gram or two. No single scale does both well. So the recurring advice is a pair, a larger scale for the green weight and a precise pocket scale for the cure. The precise one is the safety tool, because the margin between a correct dose and a dangerous one is measured in fractions of a gram.

The standard dose is 0.25% of the meat's green (raw) weight. Run the arithmetic and that 0.25% works out to about 156 ppm of nitrite in the meat, which is the figure most recipes target and which sits at or under the USDA ingoing limit (156 ppm for ground and comminuted products, 200 ppm for whole-muscle immersion cures). Over-dose and you push past the limit. The scale is what keeps you in the middle.

The two-scale rule

Ask an experienced curer what scale to buy and the answer is almost always plural. You are weighing two things that live at opposite ends of the range: the meat, which is heavy, and the cure, which is nearly weightless by comparison. A single scale that is good at one is bad at the other.

Yes, you should be using two scales. My main kitchen scale measures to the gram up to 10kg although it isn’t accurate below 50-60g or so. My salt and spice scale measures to the 1/100th of a gram but it maxes out at 250g.

The reason is that scales are most accurate in the middle of their range and least accurate at the very bottom. A scale built to read up to 8 or 10 kg is not trustworthy at 2 g, no matter how many digits it shows. So the meat gets one scale and the cure gets another, and you do not cross them over:

For weight loss, 1g resolution is more than adequate, but really you want to make sure you get one that has a capacity of at least 10#, probably more like 20# or 30#. Scales are generally most accurate in the middle of their range. This matters more the smaller the batch. Because you cannot test the finished nitrite concentration, the only control you have is weighing the inputs correctly, and a small batch concentrates any weighing error:

Why your kitchen scale cannot weigh the cure

The most common mistake is assuming the scale already on the counter is good enough. It weighs flour to the gram, so surely it can handle two grams of pink salt. In practice it often cannot even register the amount, and when it does the reading wanders:

Equilibrium curing raises the stakes on both scales

Equilibrium (EQ) curing is where the two-scale kit really earns its place. Instead of burying the meat in excess salt, you weigh a precise percentage of salt, cure, and sugar against the meat's green weight, seal it, and let it equalize. The upside is that you cannot over-salt a piece, because you only added a measured amount. The catch is that the whole method depends on getting those weights right, starting with an accurate green weight.

That means the large scale is not just for tracking weight loss during drying. It sets the denominator for every percentage in the recipe. Get the meat weight wrong and every downstream number, including the cure, is wrong with it. Curers who round because their scale will not resolve the small numbers know they are trading away accuracy:

0.01 g or milligram: how much precision do you actually need

For most home curing, a 0.01 g pocket scale is the right amount of precision. It resolves a cure dose to the hundredth of a gram, which is finer than the dose itself needs, and it costs about ten dollars. The common view is that a tenth of a gram is genuinely enough and the hundredth is there for peace of mind:

The one place to be more careful is cure #1 and #2 specifically, because that is the ingredient with a safety consequence rather than just a flavor one. Weighing it on a dedicated small scale, kept for that purpose, is the standard advice:

Milligram (0.001 g) resolution earns its keep only at the extreme small end: a single muscle, a test batch, a few hundred grams where even 0.01 g of rounding starts to move the ppm. For everyone else it is more precision than the dose requires. And there is an honest counterpoint worth hearing, for whole-muscle cures where a small error is diluted through a large piece:

It's less than half a gram of salt, there won't be any difference.

That is true for a big whole muscle and much less true for a small one, which is exactly why batch size, not dogma, should set your resolution. The smaller you go, the more the last digit matters.

Reloading and jewelry scales are the same tool, cheaper

One practical note that saves money: the scale you want already exists under other names. The 0.01 g and 0.001 g pocket scales sold for reloading ammunition, weighing jewelry, or weighing herb are the same instruments a curer needs, often at a lower price than anything marketed for the kitchen.

Reloading scales are the best and cheapest way to measure in the milligrams.
