If you already own a vacuum sealer, this feels like an easy call: you have a machine that sucks the air out of bags, so why buy Mylar and little iron packets to do what looks like the same job? It's one of the most common questions in food-storage circles, and the honest answer surprises people who've spent good money on a sealer.
Almost every guide you'll find on this comparison is published by a company that sells one of the two options, which is a bad place to get a straight answer. We sell neither. What follows is the mechanism, which is the only thing that actually settles it, plus the experience of people who have stored food both ways for years.
The short of it: your vacuum sealer is a genuinely useful tool that is being asked to do a job it was never built for. Here's where the line falls, and what each method is actually good at.
The short answer: different jobs, different timescales
Use Mylar plus oxygen absorbers for shelf-stable dry staples you intend to keep for years or decades: rice, beans, wheat, oats, pasta, flour. Use a vacuum sealer for the food you're actively cycling through, above all anything going into the freezer, plus meat, cheese, sous vide, and leftovers. The mix-up happens because both methods look like "getting the air out," and the question comes up constantly:

The answer is no, and not because vacuum sealing is bad. It's because the two methods remove different amounts of oxygen and hold it out for different lengths of time.

The mechanism: around the food versus inside it
This is the part that decides everything, and it's simpler than it sounds. A vacuum sealer pulls air out of the bag until the plastic collapses against whatever's inside. That works beautifully on a steak. Pour in five pounds of rice, though, and the machine can only take the air from around and between the grains that it can reach before the bag tightens. Plenty of oxygen stays behind in the pockets.
An oxygen absorber doesn't suck anything. It chemically binds the oxygen in the sealed space, wherever that oxygen is hiding, until essentially none is left. Owners who have measured this land in the same place:
vacuum sealing doesn't usually get it to 0 atmosphere (depending on the food). There's always a little atmosphere remaining, and oxygen in that atmosphere, and oxygen is the bane for food storage. Oxygen absorbers get it to pretty much 0% oxygen.
That difference between "most of the air" and "essentially no oxygen" is exactly what separates two years of storage from twenty-five. Oxidation is what makes stored staples go stale and rancid, and it doesn't need much oxygen to keep working slowly.
The bag itself: plastic breathes, foil does not
Even a perfect vacuum wouldn't fix the second problem, which is the bag. Standard vacuum-sealer bags are plastic film, and plastic is slightly permeable to oxygen: it seeps through the wall over months and years. Mylar is different because it carries a thin aluminum layer, which is a genuine oxygen and light barrier. That's the whole reason it's the storage standard:

So a vacuum-sealed bag slowly refills with oxygen from the outside even if the seal holds, while a heat-sealed Mylar bag keeps it out. Seals fail over decades
The third strike against vacuum sealing for the deep pantry is time. A vacuum seal is a narrow band of melted plastic holding back a pressure difference for as long as the food sits there, and over a span of years that is a lot to ask, especially with a rigid or sharp-edged food pressing on it. Experienced storers are blunt about the limit:

The safety rule both methods share
Before the buying advice, one thing matters more than any of it, and it applies to both sides of this comparison. Removing oxygen is a packaging step, not a preservation step. A low-oxygen environment is exactly the condition Clostridium botulinum prefers, so pulling the air out of a bag never makes a perishable food shelf-stable. Clemson's extension service is blunt about it: vacuum packaging is not a substitute for properly processing perishable foods, and it does not let you store them at room temperature.
So the rule is simple: anything moist, low-acid, or perishable stays in the fridge or freezer once it is sealed, no matter how tight the seal looks. Never leave vacuum-sealed meat, cheese, cooked food, fresh garlic, onions, or mushrooms on a room-temperature shelf. Dry staples like rice, beans, wheat, and pasta are the exception that makes this whole guide work: they are too dry to support bacterial growth, which is why they can sit sealed on a shelf for decades.
That same line applies to the Mylar side, and it catches people who own a dehydrator. Home-dried food often feels dry while still holding enough moisture to be unsafe once it is sealed into a low-oxygen bag at room temperature. Only commercially dried staples or home-dried food you have properly conditioned and know is crisp-dry belongs in long-term Mylar storage. If there is any doubt, store it in the freezer instead.
Where vacuum sealing genuinely wins
None of this makes a vacuum sealer a bad purchase, and we would not tell you to skip one. It is simply a different tool with real advantages inside its range. It excels at the freezer, where it prevents freezer burn better than anything else and where the cold, not the bag, is doing the preserving. It's the right answer for meat, cheese, sous vide prep, marinating, and leftovers. It's fast, it's reusable, and the clear bag lets you see what you have.
For food you're rotating through in the next year or two, vacuum sealing is the more practical method: you can open, use, and reseal without burning an oxygen absorber every time. Think of the sealer as your kitchen and freezer tool and Mylar as your decade tool, and both purchases make sense.
Do you need to do both at once?
A fair number of people try to vacuum-seal their Mylar bags, and it's mostly wasted effort. Once an oxygen absorber is inside a heat-sealed Mylar bag, the oxygen is going to be removed regardless of whether you pulled a vacuum first, and consumer vacuum sealers struggle to draw air through thick Mylar anyway:
If using actual proper mylar liners, you do NOT need to "vacuum seal" them. Use oxygen absorbers sized correctly for the container/mylar size.
Squeezing the loose air out by hand before you seal is worth doing, because it means the absorber has less work to do. But a machine vacuum is not part of the standard method. Expect the bag to draw in and firm up noticeably as the absorber works, since it is pulling out about a fifth of the gas inside, and a dense bag of rice or beans often ends up feeling like a brick. What you should not expect is the shrink-wrapped look of a vacuum sealer, because nitrogen makes up most of the air and the absorber leaves it behind. A bag that firmed up but did not collapse tight has not failed. There is one legitimate hybrid: vacuum-sealing portions in plastic and then packing those into a Mylar bag with an absorber, which keeps different foods separated inside one bucket.
So what should you buy?
If you're building a deep pantry of rice, beans, and wheat meant to outlast the decade, buy Mylar bags, oxygen absorbers, and a heat source to seal them, and put the money there first. Buy a vacuum sealer too, but buy it for what it's good at: the freezer, meat, cheese, and sous vide. Owning both is the normal end state for anyone serious about food storage, because each one covers a timescale the other can't. What you should not do is trust a vacuum-sealed bag of rice to still be good in twenty years, because the physics is against it.
