The water-bath-versus-pressure question trips up almost every new canner, usually because they are asking it backwards. It is not really a choice between two tools; it is a rule about which tool a given food is allowed to use. Get that framing right and the confusion disappears.

The difference in one idea: temperature, set by acidity

A boiling water bath holds jars at 212F, the temperature of boiling water. That is hot enough to make high-acid foods shelf-stable, because acid does the heavy lifting of blocking Clostridium botulinum. A pressure canner traps steam to raise the internal temperature to about 240F, and that higher temperature is what actually destroys botulism spores. Low-acid foods have no acid to protect them, so they need that 240F, which a water bath simply cannot reach. No amount of extra boiling time closes the gap; it is a temperature threshold, not a time problem.

The line: pH 4.6, and which foods fall on each side

The dividing line is a pH of 4.6. At or below it, a food is high-acid and safe in a water bath; above it, it is low-acid and requires a pressure canner. You do not measure this yourself; the tested recipes have already sorted foods for you:

  • Water bath (high-acid): jams and jellies, pickles and relishes, most fruit, and tomatoes or salsa that a tested recipe has you acidify with bottled lemon juice or citric acid.
  • Pressure canner (low-acid): meat, poultry, seafood, stock and broth, green beans, corn, carrots, potatoes, and most plain vegetables and mixed soups.
  • The trap: tomatoes and figs sit near the line and must be acidified to be water-bath safe; a low-acid salsa or spaghetti sauce with lots of added vegetables needs a tested recipe or a pressure canner.

Cost, effort, and the learning curve

A water bath canner is cheaper and simpler: it is a deep pot and a rack, it forgives small mistakes, and jam or pickles are a genuinely easy first project. A pressure canner costs more, weighs more, and asks for a bit more attention, venting for a full 10 minutes, holding the right pressure for your altitude, and letting it cool naturally. It is not more dangerous, just less forgiving of shortcuts. Neither is hard once you have done a batch, but the water bath is the gentler on-ramp.

One practical note: a deep pressure canner can double as a water bath canner (with the lid vented and no pressure), so if you know you will eventually can low-acid foods, a pressure canner is the more versatile single purchase. The one mistake that actually hurts people

There is exactly one dangerous way to get this wrong: water bath canning a low-acid food. It is tempting, because a water bath is easier and cheaper, and blogs and relatives sometimes swear it is fine for green beans or plain tomatoes. It is not. Botulinum toxin has no smell, taste, or reliable warning sign, so a jar can look and smell perfect and still be deadly. If a food is low-acid and a tested recipe does not have you acidify it, it goes in the pressure canner, full stop.

So which should you buy?

Buy for what you actually want to can. If it is jam, pickles, fruit, and tomatoes, start with a water bath canner and add a pressure canner later. If it is meat, stock, beans, or plain vegetables, buy a pressure canner from the start; it also covers the high-acid work.
