Quick Take

Two questions decide everything, and in this order. First, did it actually fail? Test at 12 to 24 hours with the screw band removed, and do not press the button down yourself, because a lid you pushed is a seal you can no longer trust. Second, how long ago did you process it?

Inside 24 hours you have three options: refrigerate and eat it, freeze it, or reprocess it. If you find an unsealed jar later, sitting on a shelf, that food gets thrown out. Do not taste it to check. A jar that sealed and later came unsealed also gets thrown out, because a lost seal in storage is a spoilage signal rather than a mechanical annoyance.

Why Didn't My Jars Seal? (2026)

You pulled the jars out, waited, and one lid is still domed. It is the most common thing that goes wrong in a home canning session, and the panic it produces is specific: people want to know whether the food is ruined, whether it is dangerous, and whether they can just run it through again.

The answers are all knowable, but the sequencing matters more than most write-ups admit. A surprising share of reported seal failures are not failures at all, they are jars tested too early or lids pressed down by an anxious hand. And the advice on reprocessing that circulates most widely is the version the guidance has since moved away from.

So here is the order of operations: confirm the failure, apply the 24-hour rule and its one large caveat, then work out what went wrong so the next batch behaves.

First, confirm it actually failed

Before diagnosing anything, rule out the two ways people manufacture a failure. The first is testing too soon. Lids seal as jars cool, and cooling is not uniform across a batch:

The second is pressing the center button to see whether it moves. That converts an unknown into an unknown you have interfered with, and the standard answer in the threads is that a pressed lid is no longer a lid you can vouch for:

Jam is one of the products you can reprocess. If you pressed all the lids, you should, by the book, consider those untrustworthy seals, and just reprocess.

So leave the batch alone. Twelve to twenty-four hours undisturbed on a towel, out of a draft, and no handling. The advice people give each other on this is exactly right:

Did the buttons go down on their own, or did you push them down? After processing, you should remove them from the water bath and leave them undisturbed in the counter for 12 hours before testing the seals. If they went down on their own, you can also try lifting the jar a few inches off the counter just by gripping the lid.

Then test it properly. Take the screw bands off first. This matters more than it sounds, because a band can hold a failed or weak lid in place and give you a false pass. With the band off, there are three standard checks plus one that extension services add.

  • Press the middle of the lid. A sealed lid is already down and stays down; one that springs back up is not sealed.
  • Tap the center with the bottom of a teaspoon. A clear, high ringing note means sealed; a dull note means it likely is not.
  • Look across the lid at eye level. A sealed lid is visibly concave, curved down in the middle.
  • Lift the jar a few inches by gripping only the lid edge. A real vacuum holds the jar weight. Penn State recommends this one; it is not in the USDA list.

One honest caveat on the tap test, because it produces false alarms: a dull note can simply mean food is touching the underside of the lid on an otherwise perfect seal. Do not condemn a jar on the tap alone. And the spontaneous ping you hear while the jars cool is a pleasant noise, not a test. Some jars seal silently in the canner, and floating fruit can muffle the sound entirely.

Inside 24 hours: three options

If the jar failed and you processed it recently, nothing is wasted. The straightforward route is the refrigerator, and this is the answer to the question most people arrive with:

Oh no! I pressure canned jars of meat containing spagetti sauce last night for 90 minutes at 11 psi. For some reason one jar did not seal. The jars were still quite warm this morning. Can I stick the unsealed one in the fridge and heat it up for dinner tonight or does bacteria grow that quickly?

Totally okay for the fridge. You can always put an unsealed jar in the fridge and eat it if it's been less than 24 hours since you processed it.

That is right, with a tighter number than the threads usually give. Refrigerate and use it within about three days, which is the conservative end of the published guidance. Freezing works too if the food suits it, leaving an inch of headspace, and keeps for around a year. Or you reprocess, which is where most guides go wrong.

Reprocessing: use the current protocol, not the old one

This is worth being careful about, because two different official procedures are in circulation and the older one is the one you will usually find. The legacy USDA text says to check the jar rim for nicks, fit a new lid, and reprocess within 24 hours using the same processing time. That wording is still published, and it is what most articles repeat.

The current guidance is both more discouraging and more demanding. It states outright that reprocessing is not recommended because of quality loss, and if you proceed, the procedure is not simply a second run. You empty the jar into a pot and bring the contents back to boiling, fill a clean jar, remove air bubbles, and fit a new lid. Then, critically, you process by a tested recipe for a hot-pack product. If no tested hot-pack recipe exists for what you made, the food cannot be safely reprocessed at all. One owner lays out most of that sequence correctly:

Our position is to follow the current version. When two procedures from the same body disagree, the stricter and more recent one is the one to build a habit around, and the difference is not cosmetic: the old text lets you reheat and re-run, while the new one can rule out reprocessing entirely.

The 24-hour rule has a precondition nobody mentions

This is the most important paragraph on this page. Every rescue above assumes your original attempt followed an up-to-date, research-tested recipe and process. If it did not, the 24-hour window does not help you, and the failure is not limited to the jar that stayed domed. The guidance is explicit that if a tested recipe was not followed on the first attempt, all of the jars, sealed and unsealed alike, may be unsafe and should be discarded.

That reframes a lot of seal-failure questions. Someone who poured hot jam into jars and skipped the water bath does not have a sealing problem to solve:

You boiled the lids, you may have over heated the jars and you didn't process (water bath) the filled jars. Any of these may have caused the jars not to vacuum seal, but you did not can them for shelf stable storage. You did what's called "open kettle canning", which is not recommended for safety reasons.

Open-kettle canning is exactly that case. The jars may even pull a vacuum from the heat of the food, which is the trap, because the food was never processed. Two related habits show up in the same threads and both are out of date:

You don’t need to boil lids. You don’t need to keep your jars in the oven. You DO need to use a water bath for jelly. It really seems like you didn’t use a modern, tested recipe - which one did you use, and where did you get it?

Modern lids should not be simmered or boiled. The sealing compound does not need it and heat can work against it, so follow the lid package. Holding jars in the oven is not a jar-preparation method either. Found it unsealed on the shelf: that one goes in the bin

Different situation, different answer, and there is no salvage path. A jar discovered unsealed in storage is discarded, and so is a jar that sealed and later lost its seal, because gas from spoilage organisms is one of the things that pushes a lid back up. The guidance is blunt that you should not taste food from an unsealed jar to assess it, and that instinct is common enough to name: tasting cannot detect the hazard you are worried about.

For suspect low-acid food, meaning vegetables, meat, or anything pressure-canned, disposal has a procedure rather than a bin. Botulinum toxin can be dangerous through skin contact as well as by eating, so the food and the jar are detoxified with a chlorine bleach solution, roughly one part unscented household bleach to five parts water, left in contact for around thirty minutes, handled with gloves, before anything is thrown out. Sealed jars you suspect go into a heavy garbage bag rather than being opened.

Mold gets the same treatment. Scraping mold off the top of a jam is no longer considered adequate, because mold growth raises the pH and can move a high-acid product out of the range its process relied on.

A seal is not proof the food was processed safely

Worth stating plainly on a page about seals, because the reasonable conclusion from everything above is that a sealed lid means all is well. It does not. Forming a vacuum with a modern lid takes considerably less heat than sterilizing the food inside it, so a seal tells you the lid did its job and nothing at all about whether the process did.

This is why the recipe question keeps coming up ahead of the seal question. A neat row of sealed jars processed by an untested method is a worse outcome than one honest failure, because the failure prompts a decision and the seal suppresses it.

Now the causes, and one that gets blamed unfairly

With the safety triage done, here is what actually prevents a vacuum forming. The documented causes are mundane and mostly mechanical:

did you make sure to wipe the rims down before adding the lids? Wait for a full rolling boil before starting the time count? Was the jelly hot when you poured it in the jars? Jars covered in at least 2 inches of water?

That list covers most of it. Food or fat left on the sealing surface is the single most common, and a nick or chip on the jar rim is the next. Headspace matters in both directions: too little and the food bubbles up onto the rim during processing, too much and the process may not drive the air out. Overfilled jars, a band left too loose, and forcing the jars to cool quickly all show up as well.

Documented causes of seal failure, and whether each is a quality or a safety problem.

One cause you will see cited that does not belong here: failing to adjust for altitude. Altitude adjustment decides whether the process was adequate, which makes it a safety matter of the first order, and it deserves its own attention. It is not what stops a lid from sealing.

Two hardware problems deserve singling out. Both come up constantly in seal-failure threads and both are easy to rule out. Off-brand lids are the first:

The second is jars that were never meant for preserving, which look identical on a shelf and are not built to the same standard:

On bands, the rule people garble most: tighten until you meet resistance and then about a quarter turn more, no harder. Over-tightening prevents air venting during processing and can buckle lids or break jars. Then leave them alone. Do not re-tighten a band after processing, because hot lids being tightened can cut through the sealing compound and destroy a seal that was forming. The one exception is reusable plastic lids, where the manufacturer may instruct you to tighten the band as the jar leaves the canner; follow the maker's directions on those.

Worth correcting a stale claim while we are here: reusable lids were long described as not recommended, and more recent extension guidance reports that research supports them sealing safely when used to the manufacturer's instructions. Finally, store jars with the bands off. It keeps the rims dry, and more usefully it means a seal that breaks in storage announces itself instead of being held shut by a ring.

Lost liquid but sealed? Leave it alone

Siphoning is the other thing that looks like a failure and mostly is not. Liquid gets drawn out of the jar during processing, usually from a sudden pressure change, force-cooling the canner, air bubbles left in, or jars packed too tightly:

It sounds like it probably siphoned (jar sucked water in from the canning pot) but assuming the water you canned in was safe, it will still be safe. Just maybe slightly less acidic than the other stuff you canned.

If the jar sealed, keep it. Do not open it to add liquid, which would end the process you just completed. The food above the liquid line may darken, which is a quality matter. Two caveats: if more than about half the liquid is gone, refrigerate that jar and use it within a couple of days rather than shelving it, and mark siphoned jars to be eaten first, since food residue left on the rim can grow mold and break the seal weeks later.

What actually prevents a repeat

Most seal failures trace back to three things, and all three are cheap to fix. Use lids made for canning from a brand that makes them, replace them every time, and keep jars that are sold for preserving rather than jars that merely look the part. Wipe every rim. And work from a tested recipe, which is the one that also protects you from the failure you cannot see.

If a batch does fail, the decision is quick: recently processed goes to the refrigerator, the freezer, or through the current reprocessing procedure, and anything found unsealed in storage goes out. The jar you pressed with your thumb counts as untrustworthy, so treat it as one of the failures rather than arguing with it.
