How to Store Rice and Beans Long-Term (2026)

If you want a food-storage foundation that is cheap, calorie-dense, and genuinely lasts decades, it is hard to beat white rice and dried beans. Together they are a near-complete protein, they cost very little per pound, and they store better than almost anything else in your pantry, if you package them correctly.

That last part is where people go wrong. Rice and beans left in their original plastic bags are open to air, moisture, and pantry pests, and they will not last. The fix is a simple, well-tested system, Mylar bags, oxygen absorbers, and buckets, that the food-storage community and university extension programs have relied on for years. Why Mylar plus oxygen absorbers works

Three things degrade stored grain and legumes: oxygen (which oxidizes fats and lets pests live), moisture (which invites mold), and light (which breaks down nutrients). A Mylar bag is a foil laminate that blocks light and, unlike plastic, is a true oxygen and moisture barrier. Drop a correctly sized oxygen absorber inside and seal it, and the absorber pulls the oxygen down to a fraction of a percent. That low-oxygen, dark, dry environment is what buys you decades: fats oxidize far more slowly, and any insect eggs that came in with the grain cannot survive without oxygen. The bucket around the bag adds a rodent-proof, crush-proof outer shell.

The one safety rule: dry foods only

This is the line to never cross. Oxygen-absorber packaging is safe for dry, low-moisture staples, and only those. Sealing a moist or high-moisture food into a low-oxygen environment creates exactly the conditions Clostridium botulinum needs, and botulinum toxin is odorless and tasteless. Rice, dried beans, wheat, oats, pasta, and sugar are fine because they are dry as sold. Do not use this method for anything damp, fresh, or high in moisture. Brown rice is a separate caution: it is dry enough to be safe, but its oils turn rancid in a year or two, so store white rice for the long haul and keep brown rice in the freezer.

What you need

  • Mylar bags, at least 5 mil thick (7 mil or more for buckets) - thinner bags can let oxygen creep back in over years.
  • Oxygen absorbers sized to the bag (see below). Keep unused ones in a sealed jar; they start working the moment they hit air.
  • Food-grade buckets with lids, or gamma-seal lids for buckets you open often.
  • An impulse sealer, or a hot iron and a hard straight edge, to seal the Mylar.
  • Rice, dried beans, or other dry staples - dry as sold, no need to add anything.

Step by step

Line a food-grade bucket with a Mylar bag and fill it with rice or beans, leaving a few inches at the top. Add the oxygen absorber, then seal the Mylar bag across the top with an impulse sealer or a hot iron run along a straight edge, pressing out excess air as you go. Snap the bucket lid on. Over the next day or two you will see the bag pull tight and firm as the absorber removes the oxygen, that vacuumed look is how you know it worked. Label each bucket with the contents and the date so you can rotate your oldest stock first.

Oxygen-absorber sizing and shelf life

Match the absorber to the bag volume: roughly 300 to 500cc for a 1-gallon bag, and about 2,000cc for a 5-gallon bucket liner (people often use 1,500 to 2,000cc for a full 5-gallon bag of dense grain). More is fine; too little is the common mistake. Stored cool, dark, and dry, expect white rice and dried beans to last 25 to 30 years and 8 to 10-plus years respectively; beans stay safe well beyond that but get harder and need longer cooking. Temperature matters as much as packaging: as a rule of thumb, every 10 to 20F cooler roughly doubles shelf life, so a basement beats a hot garage by years.

If you want to reach into a bucket regularly rather than reseal Mylar every time, a gamma-seal lid turns a standard bucket into a screw-top container.
