A dehydrator is forgiving right up until it is not, and the failures cluster into a handful of predictable patterns. The good news is that each has a clear cause, so troubleshooting is mostly a matter of matching your symptom to the right lever, heat, airflow, or time, rather than guessing.

Fruit leather cracks or turns brittle
This is over-drying, and cracked leather is still perfectly safe to eat; it just is not the pliable texture most people want. The cause is lost moisture, usually from being spread too thin, dried too hot, or left on too long. The fix going forward is to pull it sooner. It is done when the surface is no longer tacky and peels cleanly, not when it snaps. If a batch is already brittle, it can often be rescued: seal it in an airtight container for a few days and the pieces redistribute their remaining moisture and soften. Spreading the puree to an even 1/8 to 1/4 inch, rather than thin at the edges and thick in the middle, prevents the ragged, crack-prone edges most people get.

Fruit leather stays sticky or will not set
The opposite problem, and usually the opposite cause: the puree was too thick, too wet, or the temperature too low, so the center never finished. Purees that are very watery (watermelon, some melons) need cooking down first, and a puree with visible liquid pooling will not set evenly; stirring in a high-pectin base like applesauce also helps a loose puree firm up. Dry it a little hotter and longer, and test the center, not just the edges, which always dry first. A leather that is dry at the rim but tacky in the middle just needs more time with the trays rotated.
Applesauce is high fiber and high pectin for a good chewy texture. It's the traditional go-to for fruit leather extension and the base for most commercial versions.
Food dries unevenly, or the outside hardens before the inside dries (case hardening)
Two culprits: crowded trays and heat that is too high. When pieces touch or overlap, air cannot reach every surface, so some dry while others stay damp; leave space between pieces and rotate the trays partway through, especially in a stackable round dehydrator where the tray nearest the fan dries fastest. Case hardening, a hard, dry shell around a still-moist interior, comes from drying too hot: the surface seals before the inside can release its moisture. Lower the temperature and give it more time. This one matters beyond texture, because moisture trapped inside a sealed-looking piece can mold in storage.

Jerky comes out too hard, or will not dry
Too hard usually means sliced too thick or unevenly, or simply over-dried; jerky is done when it bends and cracks but does not snap, with no wet or shiny spots. Slice an even 1/8 to 1/4 inch (partially freezing the meat helps), and pull it as soon as it passes the bend test. Jerky that will not dry is almost always crowded trays or fatty meat, trim the fat, which does not dry and shortens shelf life, and give pieces room. Mold or spoilage on dried food
Mold means the food went into storage with too much moisture left in it, or picked up humidity afterward. Dried food should be leathery or crisp with no soft, cool, or damp spots, and the safe move for any moldy batch is to throw it out, not pick around it. Two habits prevent it: dry fully (test the thickest pieces, not the thin ones), then condition fruit before long storage, pack it loosely in a jar for a week or so and shake daily, and if you see condensation, it needs more drying. Store the finished pieces in airtight containers away from light and heat.
How to tell when it is actually done
Doneness is where most problems start, so learn the tests. Fruit should be leathery and pliable with no beads of moisture when you squeeze a cooled piece; vegetables should be brittle or crisp; jerky should bend and crack without snapping, though that bend test is about texture only, jerky safety comes from the 160F internal kill step above, not from how dry it looks; herbs should crumble. Always test a piece that has cooled, warm food feels softer and moister than it really is, which fools people into pulling batches early. Most drying problems trace back to weak or uneven airflow and a thermostat you cannot really control.
